I'm not sure what the yield would be but save your whey and make ricotta cheese with it. Ricotta requires no additional chemicals and minimal processing. And there are so many uses for ricotta - my fav is ricotta and confectionery sugar for a dessert (think cannoli without the shell). I'm European, and I remember my grandparents making cheese all the time, especially goat cheese. We loved it.

My mother used to make homemade farmer's cheese, very similar to feta, when I was a kid. She used rennet tablets, milk and a thermos. The cheese sat in the thermos for days. That's all I can remember about it and that she used to put a plate and then a rock on the plate to squeeze all of the whey out of it. Now that I know where to find rennet, I'll try to find her recipe and make some. I will also try your mozzarella cheese. Thanks, Mel, this is something I would love to try.
