Thanks for the great suggestion. My sister loves Trader Joes so I texted her a quick list which included your suggested sauce and she picked some up for me with a smile! Anyway, you converted both of us. I "stole" your recipe and my kids ate it right up - yes, even my picky eater. Thanks for a helpful post !

Have to admit I've only had Thai food a couple of times since there aren't any Thai restaurants in the immediate (15 mi. radius) vicinity here on the Cape. Actually, the closest Trader Joe's is 35 min. away. But I went there for the first time right before Christmas and found some fantastic stocking stuffers (for my adult children) and they had LOTS of samples to taste. And we often do stir fry to use up veggies and leftovers so the Peanut Satay sauce is going on my list--and the rice noodles--have never cooked with those, either, but will give them a try. Great photos, btw.
